1/2 cup flour for dredging
4 skinless, boneless chicken breasts
2 T olive oil
4 sprigs thyme or 1 tsp. Dried
2 T finely chopped shallots
2 tsp. finely chopped garlic
2 tsp. grated lemon zest
3T lemon juice
1/2 cup chicken broth
2 T butter
Salt
Pepper

Directions:

Season flour with salt and pepper.

Dredge chicken all over.

Heat the oil in a heavy skillet large enough to hold all the chicken in one layer. Add chicken and cook, uncovered, for 5 minutes.

Flip the chicken and cook for 5 minutes more, or until cooked through. Remove the chicken.

Add the thyme, shallots and garlic and cook for 1 minute

Add the lemon rind, lemon juice, broth and chicken.

Scrape the skillet to dissolve the brown particles that cling to the bottom.

Add the butter and cook for 3 minutes.
