2 pounds ground beef or buffalo
1 cup fresh bread crumbs
2 eggs
1/2 teaspoon fresh oregano leaves
1/8 teaspoon ground black pepper
2 teaspoons kosher salt
2 Tablespoons salad oil
1 cup grated parmesan for garnish

Marinara:
One 6 ounce can tomato paste
One 16 ounce can tomatoes
2 minced garlic cloves or 1/4 teaspoon garlic powder
1 small onion, chopped
1 Tablespoon sugar
2 teaspoons fresh basil, chopped
1 1/2 teaspoons kosher salt
2 Tablespoons olive or salad oil

Meatballs:
Combine ground meat, bread crumbs, eggs, oregano, black pepper, and salt. Shape meat mixture into one inch balls. In a large skillet over medium high heat, add oil, and cook meatballs until browned. Add meatballs to marinara sauce and simmer for 5 minutes. Serve in a large serving bowl and top with parmesan. Serve alone or with pasta and garlic bread.

Marinara:
Place onion and garlic in a large saucepan and cook in oil over medium heat until tender, about 5 minutes. Sir in tomatoes with juice and add all remaining ingredients. Simmer covered on low for 20 minutes, stirring occasionally.
