2 lbs. Yukon potatoes
6-8 garlic cloves, peeled
Salt to taste
2 T virgin olive oil
2T unsalted butter
1 cup warm milk
2 T finely chopped fresh basil
Ground white pepper to taste

Directions:
Directions:
Peel and cube potatoes.

Put potatoes in a sauce pan with garlic and salt and cover with water. Bring to a boil and simmer for 15 minute or until potatoes are tinder.

Drain. (Some discard the garlic but I leave it in.). Put the potatoes through a food mill or ricer and then mash with potato masher.

Add the olive oil, butter, basil, pepper and blend.

Add enough milk for the consistency you desire. Serve hot.
