Ingredients: 2 cups water (more, if needed) ¼ cup red chili powder 1 chicken bullion cube onion powder (to taste) garlic salt (to taste) Salt (to taste) 1 tablespoon flour Oil for frying (optional) 1 dozen Corn tortillas Cheddar cheese, grated Shredded beef or chicken (optional)

Directions:Combine first 6 ingredients in a pan. Heat and simmer for about 20 minutes (until thickens). Add flour if needed to thicken.
Heat oil in a pan big enough to fit tortillas. Dip tortillas one at a time in oil until soft. If you don’t want to use oil you can warm them on the stove or in the microwave. Then dip tortillas one at a time in chili sauce to cover with sauce. Remove and place on a plate. A pie tin actually works great for this.
Once all tortillas have been dip in sauce add fillings of choice. Cheese is essential but you can also add shredded beef or chicken, diced onion or olives. Roll tortilla and place in a baking dish. Once all enchilladas are made pour remaining sauce of the top and sprinkle with additional cheese. Cook in the over at 350° for 25 minutes. |
