1 cup all-bran dry cereal
1 cup buttermilk
1 egg, beaten
1/2 cup oil

1-1/2 cups flour
3/4 cup brown sugar
1 tsp. baking soda
1/2 tsp. salt
1-1/2 cups fresh rhubarb, diced

2 tablespoons sugar mixed with 1/2 tsp. ground cinnamon

Preheat oven to 400º.
Mix cereal and buttermilk in a bowl; let stand a few minutes to soften cereal. Stir in egg and oil.

Mix flour, brown sugar, baking soda, and salt in another bowl; stir into first mixture only to moisten. Stir in rhubarb. Spoon batter into greased or paper-lined muffin pan. Sprinkle tops with sugar-cinnamon mixture. Bake 25-28 minutes. Remove from pan; cool on a rack. Serve warm. Refrigerate leftovers.
