1 onion, diced
1 T olive oil
1 lb. lamb or beef minced
1 clove garlic, crushed
1 large carrot, diced
1 beef stock cube
1 lb. chopped tomatoes
1 T corn flour
3 T tomato paste/puree
pinch of salt and pepper
2 lbs. of potatoes
1 stick of butter
1/2 C cheddar cheese

Directions:
Directions:
Heat the oil in a pan, add onion, garlic and carrots and cook till soft. Add minced meat and stock cube then cook till the mince is brown and shows a crumbly mixture. Stir in tomatoes and tomato paste puree, and add the com flour. Leave to simmer, stirring occasionally, for about 15 minutes, or until thickened.

Meanwhile, peel and chop potatoes and boil till soft, then mash with butter and salt and pepper to taste.

Put the filling into a deep dish, then top with the mashed potatoes, then cheese (my version) until the top is brown and crisp.

English Shepherds Pie is made with lamb.
