Mushroom Stuffed Beef Tenderloin Recipe

Ingredients: 1 whole beef tenderloin (2-3 lbs.) 1-2 tsp. light oil 2 T minced shallots 3 garlic cloves, minced 4 oz. mushrooms, sliced 1 T dry wine 1 red pepper, roasted and peeled 5-6 basil leaves, fresh salt and pepper 5-8 feet butchers twine 3-4 T chili rub (see recipe)

Directions:Preheat oven to 425º Clean and prepare tenderloin as directed Heat a saute' pan and add oil Add shallots and garlic. Saute' briefly and add mushrooms. Once mushrooms are soften, add wine. Add salt and pepper Saute' till wine is absorbed Set mushroom mixture aside to cool. Taste for salt and pepper. Season the inside of the tenderloin with salt and pepper Cut the roasted red pepper into long strips Lay the strips of the red pepper along the length of the tenderloin Lay basil leaves on top of peppers Portion the mushroom mixture on top of basil Tie up tenderloin into tight bundle Season the outside of the tenderloin with salt and pepper Rub with chili seasoning Place tenderloin seam side up on prepared roasting rack and place in hot oven Roast tenderloin for 20-25 minutes for medium rare. Or until internal temperature of 135º F 170º for well done Remove from oven, tent with foil, let rest for 5 minutes Slice and serve with desired sauce. |
