8 c broccoli florets (fresh or frozen)
1 large yellow onion
4 c reduced sodium vegetable broth
1 can 15.5 cannellini beans (white) rinsed and drained
Kosher salt & pepper
Shredded reduced fat sharp cheddar cheese

Directions:
Directions:
Coat a large pot with non stick spray and warm over medium high heat. Add onions and saute' 10 minutes.

Add broth,broccoli and beans. Bring to a boil and reduce heat and simmer 10 minutes. Remove pot from heat and puree mixture into a creamy consistency. Salt & pepper. Top each bowl with cheese.
