2 onions, chopped
1 green pepper, chopped
2 to 3 garlic cloves, minced
4 tbsp. olive oil
1 1/2 lbs. ground chuck
1 1/2 tbsp. flour
2 tbsp. mild chili powder
1 tbsp. cumin
3 cups chicken or beef stock
1 tsp. salt
28 oz. can crushed tomatoes
2-15 oz. cans kidney beans, drained
1 tbsp. Worcestershire sauce
1 tbsp. steak sauce, such as A-1
1/2 to 2 cups additional stock or tomato juice, if needed

Directions:
Directions:
In a large stock pot, sauté onions and peppers in olive oil until soft. Add the garlic and cook for 5 minutes. Add the ground chuck and brown until cooked through. Drain any additional fat. Add the flour; mix well. Add the rest of the ingredients and cook for 35 to 45 minutes; stirring every 10 minutes. If there is not enough liquid, add stock or juice to taste.

This is a great "go to" recipe when you have a pound or so of ground beef in the fridge and no idea what to make for dinner. You can add any additional hot sauce in the last 5 minutes of cooking if you want it more spicy. Yummy with grated cheese and sour cream on top. We have been known to throw a handful of Frito chips to top it off!
