1/4 cup fresh lemon juice (2 to 3 lemons)
3 1/2 tsp. grated lemon zest
1 cup butter, divided
2 cups flour
1 tsp. baking powder
1/2 tsp. salt
1 1/2 cups sugar
1 egg
2 tsp. vanilla extract
1 tbsp. poppy seeds plus more for sprinkling
Directions:
Directions:
In a small saucepan, bring lemon juice to a simmer; cook until reduced by half. Add 1/2 cup butter; stir until melted. In another bowl, whisk together flour, baking powder and salt; set aside. In mixing bowl, cream together the remaining 1/2 cup of butter and one cup of sugar. Mix in egg and lemon butter; beat until pale, about 3 minutes. Add the vanilla and 2 teaspoon lemon zest; beat well. Add in the flour mixture and poppy seeds. In a small bowl, mix the remaining 1/2 cup sugar and 1 1/2 teaspoon lemon zest. Roll the dough into 1 1/4-inch balls, then roll them into the sugar mixture. Place on parchment-lined cookie sheets and flatten them with the bottom of a glass to about 1/4 inch thick. Sprinkle with poppy seeds. Bake in a preheated 375º oven for 10 to 11 minutes or until just browned around the bottom edges.
