3 Onions
5 lbs. Rice (long grain or sushi rice)
6 lbs. Ground Beef
2 lbs. Frozen Peas
1/2 " Cubed Mozzarella (approx. 50)
12 oz. Grated Parmesan
2 - 24 oz. Italian Bread Crumbs or Seasoned Gluten Free Bread Crumbs
Pancake Mix or eggs.
Vegetable or Canola Oil for Frying

Fry diced onions in olive oil. Set aside
Cook rice. Works well with rice cooker. Can use chicken broth instead of water. Lightly salt if needed.
Fry hamburger and crumble. Lightly season with pepper. When cooked and slightly cooked, add parmesan and mix thoroughly. Add cooked peas and mix.
Add sauce to rice, only enough to lightly color the rice.
Mix pancake mix with water only to make a very thin batter/or beat eggs (GF).
Cup your hand with rice. Place a small portion of beef mixture with a cube of mozzarella in center. Place another portion of rice over meat and press together to form a ball (softball size). Dip in pancake mix or eggs and roll into breadcrumbs. Deep fry and enjoy. Serve with a light tomato sauce. If you need to reheat, 375º uncovered for 30 minutes. Enjoy
