1/2 cup butter at room temperature
1 cup sugar
Two eggs
1 1/2 teaspoons vanilla extract
2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
One and a half cups chopped nuts (walnuts)

Directions:
Directions:
Combine butter sugar and eggs in bowl. Mix well. Beat in vanilla.

Combine flour baking powder baking soda and chopped nuts in another bowl. Add to egg mixture, batter will be stiff and sticky. Cover dough with plastic wrap and refrigerate for one hour or overnight.

With floured hands divide dough into two portions. Shape each into loaf into 12 inches long (like French bread.)

Grease 14 x 9" baking sheet. Place both Loaves on sheet, leaving at least 3 inches between them. Flatten each loaf slightly, as evenly as possible.

Bake at 400° about 20 minutes, or until firm to touch.

Remove baking sheet from oven and place on a wire rack to cool slightly. Reduce oven temperature to 375°.

Let cool and slice loaves into diagonal slices about 1/3 inch thick. Arrange slices on ungreased baking sheet and return to oven at 375. Bake an additional 15 minutes or until firm do not brown.
Place biscotti on wire rack to cool completely. Store in airtight container.

For chocolate biscottis:
change flour to 1 3/4 cup and add 1/2 cup cocoa and one and a half cups chocolate chips to the flour-nut mixture. Very good!
