1 tbsp. olive oil
1 medium onion chopped
2 garlic cloves, minced
1 pkg potato gnocchi (16 oz)
1 can white kidney or cannellini beans (15 oz) rinsed and drained
I can Italian diced tomatoes, undrained ( 14 1/2 ounce)
1 pkg fresh baby spinach ( 6 ounces)
1/2 tsp pepper
1/2 cup shredded mozzarella cheese
3 tbsp. grated parmesan cheese

In a large skillet, heat oil over medium-high heat. Add onion; cook and stir until tender. Add garlic; cook 1 minute longer. Add gnocchi and cook and stir 5-6 minutes or until golden brown. Stir in beans, tomatoes,spinach and pepper. Heat through.

Sprinkle with cheeses; cover and remove from heat. Let stand 3-4 minutes or until cheese is melted

I added leftover rotisserie chicken but cooked sausage would also taste great.
