½ cup condensed mushroom soup
½ cup mayonnaise
1 egg, beaten
1 tablespoon minced onion
1 cup shredded cheese
1 medium eggplant
3/4 cup crushed Ritz crackers (about 15 crackers)
1 tablespoon butter

Directions:
Directions:
Peel and dice the eggplant. Cook in boiling, salted water for 10 minutes; drain. Mix soup, mayonnaise, egg, onion and cheese with boiled eggplant. Place in greased casserole dish and cover with crackers. Bake for 25 minutes at 350 degrees.
