½ package turkey sausage
1 cup thinly sliced mushrooms
Salt to taste
2 burrito sized tortillas (10 in)
½ cup shredded mozzarella cheese
10 large slices pepperoni
2 tsp Parmesan cheese

Optional ingredients if you want to make your own sauce (If not, use store bought)
½ cup canned crushed tomatoes
1 ½ tsp red wine vinegar
1 ½ tsp olive oil
1 clove garlic minced
½ tsp dried Italian herbs
½ cup baby spinach
1 pinch each sugar and red pepper flakes

Slice turkey sausage into crumbled pieces and cook until brown in skillet over medium heat (spray skillet with non-stick spray); add mushrooms and salt to taste. Sauté until sausage is cooked through, about 9 minutes). Remove sausage and mushroom mix and pour into a small bowl; let rest. Wipe out skillet with paper towel.
If you are using store bought pizza sauce, skip this step. Stir together tomatoes, vinegar, oil, garlic, herbs, spinach, pepper flakes and sugar in a bowl using a whisk.
Heat skillet over medium-low heat. Arrange one of the tortilla’s in skillet and spread with 2-3 tablespoons of the tomato sauce. Top with ¼ cup cheese, followed by ½ the sausage mushroom mixture and five slices of the pepperoni. Top with 1 tsp parmesan. When Mozzarella is melted, transfer tortilla to cutting board and roll. (Tortilla may crack a little but that’s ok) Let stand 1 minute before slicing.
