1 Tablespoon olive oil
2 cups homestyle sliced potatoes (you can buy these in a bag in the grocery store)
⅓ cup water
6 Kalamata or black olives (pitted)
¼ teaspoon salt
⅛ teaspoon pepper
1 ½ lb. Tilapia fillets thawed
1 teaspoon fresh lemon juice
1 (14.5 oz) can herb/garlic diced tomatoes
¼ cup crumbled tomato basil feta cheese

Directions:
Directions:
Place oil in large pan, add potatoes and water then cover cook and stir occasionally on medium high heat. Chop olives coarsely
Reduce heat under pan to medium. Arrange potatoes evenly into a single layer, sprinkle with olives, salt, and pepper. Place fish (dark side up) on potatoes. Squeeze juice of ½ lemon all over fish.
Drain tomatoes thoroughly. Spread tomatoes over fish and sprinkle with feta cheese then cover and cook 4-6 minutes longer depending on how thick your fish is. Fish will be flaky and white when finished. Reduce heat to low and remove cover. Cook 1-2 minutes to allow any extra liquid to evaporate.
