1 cup butter or margarine
2 medium onions, finely chopped
4-5 stalks celery, diced
1 lb fresh mushrooms, sliced
12 cups herbed-seasoned stuffing cubes
1 tablespoon chopped fresh sage (or 1 tsp dried)
1 tablespoon chopped fresh thyme (or 1 tsp dried)
1 tsp poultry seasoning
1 tsp salt
½ tsp pepper
6-8 cups vegetable stock

Directions:

Melt butter in large pot over medium heat. Cook celery, onions, and mushrooms until tender, stirring occasionally. Add half the stuffing cubes and mix evenly until softened. Stir in remaining cubes and remaining ingredients, except for the stock. Stir and cook until softened. (Takes only a few minutes) Add stock and stir to moisten (if necessary, more stock can be added). Scoop into baking pan; bake, covered, for 20 minutes. Uncover and bake 15 minutes longer.
