8 zucchini, large enough to stuff
½ cup bread crumbs
4 oz. ricotta cheese
½ cup grated Cheddar cheese
1/3 cup grated Parmesan
2 tsps. oregano
1 tsp. basil
1 clove of garlic, chopped fine
1 egg

Directions:
Directions:
Preheat oven to 375 degrees . Cook the zucchini in boiling salted water for 5 minutes and drain. Cut the zucchini in half and scoop out the inside with a spoon. Chop the scooped-out zucchini finely and put in a bowl; add bread crumbs, cheese, oregano, basil, garlic and egg and season with salt and pepper. Mix together, adding a little milk, if necessary, to make it stick together. Stuff the zucchini shells with the mix. Spray baking pan with vegetable-oil spray and arrange the zucchini close together. Bake 35-40 minutes or until golden brown on top.

This is one of my favorite recipes and I always make it when I am making dinner for someone who says they wonder what it's like to eat as a vegetarian.
