"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Ingredients:
Ingredients:
12-16 ounce salmon fillet
1 tsp Old Bay seasoning
1/2 tsp Black Pepper

Directions:
Directions:
Preheat the oven to 400 degrees F.

Rinse the salmon with water. Pat dry with a paper towel and spray the skin with cooking spray. Place salmon, skin side down, on a non-stick baking sheet or in a non-stick pan with an oven-proof handle.

Sprinkle with seasoning and bake until salmon is cooked through, about 15 to 20 minutes. You must bake it long enough to cook the thickest part of the fillet. It's done when you can insert a fork into the thickest part, twist it and the fish flakes easily.

SKILLET METHOD
This can also be done in a skillet on the stove top. Heat skillet to med, place salmon in the hot skillet. Cover but leave a small gap on one side, this allows the steam to escape but concentrates the heat in the pan.

Personal Notes:
We love salmon so I make this a lot. Sometimes I use Lemon Pepper seasoning or some Mrs Dash seasoning.
