Salt and freshly ground pepper
1 flatiron steak (about 1-inch thick), about 1 1/2 pounds total, trimmed of excess fat

Preheat a grill to medium. Lightly oil the grill grates and season the steak with salt and pepper. Grill the steak until desired doneness, about 5 minutes per side for medium-rare. Remove steak to cutting board to rest 5 minutes. Slice on the diagonal and serve with the Chimichurri Sauce.


Chimichurri Sauce:
1 small garlic clove
2 teaspoons red-wine vinegar
2 Tbls extra-virgin olive oil
Salt and freshly ground black pepper

1/4 cup fresh herbs, such as parsley, mint and cilantro
Combine oil, garlic, vinegar, salt, black pepper, and herbs in a blender. Pulsing until a thick sauce forms.

Our butcher recommended the flatiron steak to us and it's delicious. It's a long, narrow piece of meat and you grill it all in one piece rather than having an individual piece of meat for each person. To serve slice it on the diagonal and serve several of these slices to each person. It's all we buy now.
