2 tablespoon olive oil
2 onion, chopped
12 chicken legs or 8 thighs
6 cloves garlic, chopped
1 8oz pack of mushrooms, sliced
bunch of asparagus, cut into bite sized pieces, optional

3 cups chicken stock
3/4 cup balsamic vinegar
1 can of diced tomatoes or 3 fresh tomatoes
1 teaspoon dried thyme
salt and pepper to taste

Directions:
Directions:
In a 4qt pan, heat oil over medium heat. Add onion, reduce heat to med-low. Allow onion to caramelize,add garlic and saute briefly. Remove onions and garlic.

Combine chicken stock and vinegar.

Turn heat to medium, add more oil if needed. Brown chicken on all sides.Remove chicken from pan. Deglaze pan with chicken stock/vinegar mixture. Return chicken, onions back to pan. Add mushrooms, tomatoes, asparagus, thyme, salt and pepper. Cover and bring to a boil, turn down heat and let simmer for approx 45 minutes or until chicken is starting to fall of the bone. Remove lid and continue to simmer to reduce sauce. Stirring occasionally. Remove chicken. Add a bit of thickener such as arrowroot powder with water to thicken sauce if needed.

Serve with boiled potatoes, rice or noodles.
