Ingredients: For Garlic 18 Cloves Fresh Garlic 1 TBS Olive Oil
For Potatoes 5 lb Yukon Gold Potatoes, peeled and cubed 8 oz Unsalted Butter 12 oz Milk 2 ea Lemons, zest of 1 TBS Kosher Salt 2 tsp Ground White Pepper

Directions:"For the Roasted Garlic – Toss garlic cloves with olive oil and wrap in aluminum foil. Place in 300 degree oven and roast for about 45 – 60 minutes until garlic is browned and tender. Puree and reserve. For the Potatoes – In a large pot, cover potatoes with water. Bring to a boil and simmer over medium heat until tender. Drain and return to the pot. Bring milk, lemon zest and butter to a boil. Add to potatoes along with the roasted garlic and mash over low heat until creamy and heated to 140. Season with salt and pepper. Hold hot at 145 degrees for service. " |
