1/4 Cup Olive Oil
2 ea Red Onion, small dice
1/4 Cup Garlic, minced
1 #10 Can Great Northern Beans, rinsed
6 Cup Cooked Orzo (follow package instructions)
6 ea Lemons, juiced and zested
4 Cup Julienne Baby Spinach
2 tsp Kosher Salt
2 tsp Ground Black Pepper
2 Cup Crumbled Feta

Directions:

"1. Heat oil in 10-inch saute pan over medium heat. Add onion and garlic; cook until translucent
2. Pre heat oven to 350 degrees F.
3. In hotel pan, add onions and garlic, beans, orzo, lemon juice and zest and spinach. Season with salt and pepper to taste and mix well.
4. Bake in oven uncovered for 10 minutes.
5. Remove from oven, top with feta and serve.
Hold hot at 145F for service."
