1 ea Garlic Head, peeled and crushed
4 3/4 heads Cauliflower, steamed, cut into bite size florets (about 40 cups)
1 Cup 1% buttermilk or substitute, non fat yogurt
1 1/3 tsp Olive Oil
2 tsp Salt
1/8 tsp Ground Black Pepper
1/3 Cup Fresh Chives, chopped as garnish
4 tsp Butter- salted

"1. Place steamed cauliflower florets and garlic in a food processor and pulse several times.
2. Add buttermilk, 1 teaspoon oil, butter, salt and pepper and pulse several more times, then process until smooth and creamy.
3. Transfer to hotel pan and garnish with remaining teaspoon oil and garnish with fresh chives. "
