40 OZ Ziti, uncooked
8 EA Large Eggs
4 tsp Kosher Salt
4 tsp Ground Black Pepper
8 TBS Pecorino Romano, grated
6 Cup Baby Spinach, blanched
40 oz Butternut Squash, medium dice, blanched
40 oz Pomodoro Sauce (see recipe)
Parmesan, grated, garnish
Italian Parsley, chopped

Pre-Heat Oven to 350 Degrees
1. Cook the ziti al dente, Drain and cool with cold running water.
2. In a large bowl, lightly beat the eggs, and season with salt and pepper. Add the ziti, blanched spinach and butternut squash and toss to combine with the eggs. The ingredients should be lightly coated with egg. Toss in the pecorino cheese.
3. Generously Spray a full hotel pan with Pan Spray.
4. Pour egg/pasta mixure into the hotel pan.
5. Bake until pasta is set and nicely browned on top - 30-40 minutes.
Cut the Frittata into 4 x 5 - serve with 2 oz of sauce, grated cheese and parsley. "
