4 lb Fresh Carrots, washed, peeled, julienned
2 lb Snow Peas, washed, stemed, julienned
3 oz Fresh Jalapeno, washed, seeded, finely chopped
3 oz Fresh Lime Juice
8 oz Olive Oil Blend
2 TBS Kosher Salt
2 tsp Ground Black Pepper
1 Cup Pumpkin Seeds, toasted (can sub sunflower seeds)
3/4 Cup Fresh Cilantro, washed and coarsely chopped

Directions:
Directions:
"1. In a large mixing bowl, toss carrots with snow peas and jalapeno.
2. Add lime juice and olive oil and toss to coat. Add salt and pepper and mix well.
3. Place salad in quick pik container and divide garnish of cilantro and toasted pumpkin seeds evenly over the top of each salad. Cilantro first in the center of salad, followed by pumpkin seeds on top of cilantro."
