3 lb Green Split Peas
1/4 C Olive Oil
1 1/2 TBS Paprika
1 1/2 TBS Chipotle, canned in adobo sauce, chopped
6 lb Sweet Potato, peeled, small dice
3 lb Onion, small dice
1 lb Celery, small dice
2 TBS Garlic, minced
1 1/2 Qt Crushed Can Tomato
2 Qt Water
1 TBS Kosher Salt
2 tsp Ground Black Pepper

Directions:

"1. Place spit peas in a large pot, cover with cold water and soak overnight.
2. Heat oil in a large stock pot over medium. Add paprika and chipotle and stir. Add sweet potato, onion and celery. Cook, stirring occasionally 8-10 minutes or until onions are tender. Add garlic and cook 2 minutes more.
3. Drain the split peas and add to the pot with the crushed tomato and water. Bring to a boil, reduce heat to medium-low and simmer 1 hour or until peas are tender. Season to taste with salt and pepper."
