1 cup tomatoes, 1 cup red, yellow or green bell pepper, 1 small red onion,1 lime, 1/3 cup cilantro, salt, pepper

Chop vegetables so that they are all bite sized. Combine all ingredients in a bowl and stir. At this point you can add 1 cup of fresh pineapple or peaches.
