1 pint small grape or cherry tomatoes, 1/4 cup olive oil, 1 tbsp.balsamic vinegar, 3 tbsp.chopped fresh basil, finely chopped small red onion, salt & pepper to taste, 8 oz. cubed mozzarella cheese,sliced french baguette or other crusty bread, softened butter.

Chop tomatoes into small bite size pieces.Add all other ingredients and mix thoroughly...set aside. Place buttered pieces of bread on a cookie sheet...buttered side down. Place in preheated 375 degree oven for 10 to 15 minutes until lightly browned. Place bread on a platter and spoon tomato mixture on each piece of bread...serve

Family favorite...I especially love making this in the summer time with fresh tomatoes. You can also add fresh, chopped garlic and oregano...or spread fresh pesto or sun dried tomatoes on the toasted bread first before you add the other ingredients.
