4 lb Pork Butt or shoulder, thinly sliced
8 oz Spanish onion, julienned
2 oz Korean Chili paste (Gochujang) or Sambal
1 fl oz Soy sauce
1 oz Sugar
1 oz Fresh Garlic, minced
1 oz Fresh Ginger, minced
1/2 fl oz Sesame oil
1 fl oz Canola oil
16 each 6" Flour or White Corn Tortillas

"1. In a mixing bowl, place pork and remaining ingredients except canola oil and tortillas. Mix well.
2. Marinate for 2 hours.
3. In a large saute pan on medium heat add canola oil, heat oil about 25 seconds. Add pork and saute rapidly for 6 to 8 minutes or until the pork is cooked through and soft.
4. Stuff 2 oz. of pork into a tortilla serve immediately with Kim Chee Cucumbers

Chefs Note: Tacos can be served with shredded lettuce, tomatoes and cheese."
