20 lb Boneless Pork Shoulder, 1 inch cubes
15 TBS Oil
15 ea White Onion, chopped
15 ea Garlic Cloves, chopped
5 TBS Oregano
2 1/2 TBS Cumin
30 ea Tomatillos
30 ea Green Chile (canned are ok but roasted peeled are better)
1 TBS Kosher Salt

Directions:
Directions:
1. Place Meat in a pot and cover with cold water and bring to a boil. Boil for approx 40 min.
2. Drain meat and then add to heavy skillet with oil allow to brown and develop flavor.
3. Add in onions garlic and cumin and salt and tomatillo and green chiles.
4. Simmer for 30 more mins to reduce and thicken sauce.
5. Hold hot at 145F for service."
