20 lb Chuck Roast
12 TBS Oil
6 ea White Onion, chopped
12 ea Garlic cloves, chopped
6 TBS Oregano
3 TBS Cumin
2 #10 Can Tomato Puree or 7-11 tomato in blender
3 TBS Kosher Salt

Directions:
Directions:
1. Place meat in a pot and cover with cold water and bring to a boil.
2. Boil for approximately 1 1/2 hours.
3. Drain meat and shred, then add to heavy skillet with oil, allow to brown and develop flavor.
4. Add in onions, garlic, cumin, salt, and tomato.
5. Simmer for 30 more minutes to reduce and thicken sauce.
6. Hold hot at 145F for service."
