20 lb Boneless Pork with some fat, cut into 2-in chunks
10 ea Dried California Chiles
10 ea Dried Pasilla Chiles
8 ea Garlic Cloves
4 TBS Oregano
2 TBS Ground Cumin
1 TBS Cloves
4 TBS Kosher Salt
2 Cup White Wine Vinegar

Directions:
Directions:
1. Seed and toast chiles in a dry skillet.
2. Add water, cover, and bring to a boil.
3. Drain and place in a blender with rest of ingredients and blend thoroughly.
4. Cool completely and toss meat with marinade and let sit for 1-3 days.
5. Grill on hot grill, chop and serve or hold hot at 145F for service."
