60 lb Pork Butt, quartered
6 bu Cilantro
3 Cup Garlic, chopped
1/4 Cup Cumin
2 Cup Chili Powder
138 oz Pineapple Juice (3 cans)
1 Cup Lemon Juice
3/4 Cup Canola Oil
3 ea Jalapenos
2 1/2 Cup Kosher Salt
3 TBS Black Pepper

Directions:
Directions:
1. Puree garlic and cilantro.
2. In a large pot on medium heat, sear pork on all sides, about 2 minutes per side.
3. Add all ingredients, braise on medium heat 4 hours. Add water as needed.
4. Remove pork from the pot, pull pork, strain braising liquid, add to the shredded pork.
5. Hold hot at 145F for service or cool rapidly."
