20 lb Pork Butt (cubed and defatted) or stew meat 1 inch
For Marinade:
2 bunch Fresh Cilantro
1 Cup Garlic Cloves
3 TBS Ground Cumin
3 TBS Chili Powder
2 Cup Pineapple Juice
1/4 Cup Lime Juice
1/4 Cup Oil Blend
1/2 TBS Kosher Salt
1/2 ea Jalapeno

Directions:
Directions:
1. Remove fat and clean meat, cut into even chunks.
2. Mix all ingredients in marinade in blender or robocoupe
3. Toss with meat to combine with marinade.
4. Marinate overnight or up to 3 days
5. Remove from marinade.
6. Add pork to oiled hot skillet and cook through to 145F for 15 seconds, charring nicely.
7. Remove from skillet and hold hot at 145F for service."
