4 Qt Converted Rice ( Uncle Bens)
6 1/2 Qt Water
2 Cup White Onion, diced
1/2 Cup Garlic, chopped
1 Cup Vegetable Oil
For the Cilantro Puree:
3 Cup Fresh Spinach
6 Bunch Fresh Cilantro
5 ea Garlic Cloves, peeled
(water from above)
1 Cup Vegetable Base Paste

Directions:
1. Puree Instructions: Place all ingredients in blender and fill with water. Blend until very green and fully pureed. Place in measuring cup and fill with water to 6.5 Qt and reserve for later.
2. Rice Instructions: Place large flat pot on burner and add oil and onions.
3. Cook onions until translucent and then add garlic.
4. Add in rice and toast in oil until all grains have been warmed through.
5. Add in puree/water mixture and bring to a boil.
6. Remove from stove and cover with foil or lid and place in oven to bake.
7. Bake at 350 for 45 minutes.
8. Remove from oven and let rest for 15 minutes to finish cooking.
9. Hold hot at 145 F for service."
