2 lb Red Onions, Halved and Thinly Sliced
1/4 C Red Wine Vinegar
1/4 C Water
1 tsp kosher salt
2 tsp Ground Black Pepper
1 ea Bay leaf
1/2 tsp Whole Cloves
4 oz Beet, scrubbed and quartered

In a large stainless steeel bowl, toss together all of the ingredients. Cover and refrigerate, tossing occasionally for 2-3 hours. Remove beets, cloves, and bay leaf and refrigerate.
