1/3 ea Poblano Pepper
1 ea Jalapeno
1/2 ea Serrano Pepper
1/3 ea Long Green Chili
1 ea Tomatillo
1 TBS Honey
1/3 tsp Sugar
2 ea Limes, juiced
2 TBS White Vinegar
2 TBS Water
2 tsp Kosher Salt

Directions:
Directions:
1. Pulse chiles, tomatillo and kosher salt in a food processor until a coarse purée forms. Transfer to a 1-qt. glass jar, loosely screw on lid, and let stand at room temperature for 12 hours to ferment slightly.
2. Stir in honey, sugar, lime juice, white vinegar and water and loosely screw on lid. Let chile mixture stand at room temperature for at least 1 day and up to 7 days. (Taste it daily; the longer it sits, the deeper the flavor becomes.)
3. Purée mixture with in a food processor or blender until smooth, about 1 minute. Place a fine-mesh sieve inside a funnel.
4. Strain mixture through sieve into a clean glass bottle.
5. Cover and refrigerate for later use.
(Hot sauce will become thinner and may separate after you strain it; shake vigorously before each use.)"
