2 large cucumber
4 large tomatoes
1/2 cup olive oil
1/2 cup lemon juice
1 table spoon
1 red onion (option)

White Rice
2 cups water
1 tbsp butter
1 cup long grain Jasmine white rice

Directions:
Directions:
Chop cucumber, onion, tomatoes , into little squares (small) then combine all ingredient into bowl. taste to see if you need more salt.

White Rice:
combine water and butter in a sauce pan, boil on high until it starts to bubble.
Lower heat to 3-4 or medium low and pour in rice. Cover and cook for 10 minutes , then stir so all gets cooked. all together takes 20 min for rice to cook. take off heat when done and let it set or until ready to serve.

This recipe is dedicated to my mom. she would have this every summer and more then once haha...as this cookbook was put together she passed away. She was an amazing person and had the biggest heart any one could have. she was and is my role model and inspiration to be an amazing parent and person, i will always love you and remeber all the times we made this together.
