1 large yam, peeled and cut into 1 1/2" chunks
4 sm red potatoes, quartered
1 sweet onion
4 large carrots, sliced on the bias 1/4" thick
1 Tbls melted butter
Olive oil
1 tsp parsley
1 tsp thyme
1 tsp chives
Salt & pepper to taste

Directions:

Heat the oven to 350* Cover a cookie sheet with foil and spray with cooking spray.

Cut the onion into quarters and place it whole onto the foil. Drizzle with a little olive oil and a sprinkle of seasonings.

Chop the other veggies and place them in a large bowl. Drizzle them with the melted butter and a little olive oil. Sprinkle them with the seasonings and toss till all is evenly coated.

Dump them on the foil and put it in the oven. Bake 40 min
