Roasted Red Potatoes Recipe

1 1/2 lb (6-7) small red potatoes
6 oz pancetta or bacon
1 1/2 Tbls fresh rosemary
2 Tbls olive oil
Salt & Pepper to taste



Directions:
Directions:
Place potatoes in a pot of cold water on the stove top, bring it to a boil and boil 10 min. Remove the potatoes from the water and let them cool a bit while you start cooking the pancetta. Cook the pancetta in a skillet with the olive oil for about 5 min to render off some of the fat, you don't want to fully cook it at this point.

Cut the potatoes in quarters and place them in a lrg bowl. Sprinkle liberally with salt and pepper, add the rosemary, pour the pancetta and all the delicious oil over the potatoes. Stir this around till the potatoes are well coated, dump this onto a baking sheet and drizzle with a little more olive oil to help keep them from sticking.

Bake at 400* for 15 min, remove the pan and shake it a bit to shift the potatoes a bit to make sure they aren't sticking, return it to the oven and bake another 15 min till they're nice an crispy.

I like to do these when I have the meat cooking in the oven as well. It can all go in the same oven and come out ready to eat.
