2 cups whole milk
1/2 cup butter
1/2 cup Crisco or lard
1 T sugar
4 t salt
1 1/2 pkg yeast
6 cups flour

Scald but do not boil milk. Pour over butter, Crisco, sugar and salt.

In the meantime soak yeast in 1/3 cup warm water. Combine when first mixture has cooled to tepid temperature and then add flour (just enough so you can handle without sticking to hands).

Let rise in warm place until double size, then make out into zweibach and let rise to double size again. Bake at 400 degrees.

For Bröcken, set oven at lowest level and dry out for approx 5 hours (or overnight) with little or no browning if possible.
