2 med baking potatoes (great with yams also)
½ tablespoon olive oil
1 pinch ground cayenne pepper
1 teaspoon Salad Supreme

Utah Fry Sauce – This is a Utah original that is a staple of every fast food place and restaurant in the state. So much better than plain ketchup!!

1 part ketchup
1 part mayo

Mix well using a fork till the chunks of the mayo are blended with the ketchup. Dip your fries in the sauce and enjoy.

Some people like to add a small amount of pickle relish but I don’t like it

Preheat oven to 450 degrees. Line a baking sheet with foil, and coat well with cooking spray. Scrub potatoes well, peel or not as you like and cut into 1/4 inch thick fries. Place cut fries in a lrg bowl.

Drizzle with the olive oil, pinch of sugar and seasonings, toss to coat all fries evenly. Spread on baking sheet in one layer.

After 20 minutes, remove from oven and turn fries with a pancake turner. This will help them brown evenly and keep them from sticking. Bake another 10-20 minutes, until potatoes are tender and browned. Serve immediately.

To cut fries – first, cut the potato in half lengthwise. Then take each half and cut it vertically into strips. Lay the strips on their side and cut them vertically in half. Some strips may not be wide enough to cut in half, you have to decide. You should have about 16 fries from a med potato, more or less.

If you're doing sweet potato fries be careful!! They're very hard to cut and you could lose a finger if you aren't careful. They bake into delicious fries tho.
