½ lb bacon, cut up
6 lrg potatoes, sliced
2 sweet onions, chopped (Vidalia, Maui, Walla Walla)
½ cube butter
Salt and Pepper

Directions:
Cut up the bacon and fry it up till done. Remove the bacon from the oven, don’t drain the grease.

Add some butter, you decide if you need the whole ½ cube or not depending on how much bacon grease there is. When it's melted add the potatoes and onion. Stir till the veggies are coated in butter. Sprinkle with salt and pepper to your taste.

Cover but leave a slight gap to one side of the pan, this allows the steam to escape but still keeps the heat focused in the pan. Leave over med/lo heat for 20 min or so, stirring occasionally till the potatoes are pretty soft when you stick a fork in them. Uncover and turn the heat up to med/hi, cook another 10 min or so till the potatoes get nicely browned.

Of course this can be done without the bacon, it's just not as good. Do not add water, it isn't needed and the potatoes won't be as good.
