12 medium boiling potatoes, peeled and cut into large pieces (4 lbs)
3/4 to 1 cup milk
1/2 cup butter, softened
1/2 tsp. salt
1/8 tsp. pepper

Directions:
Directions:
Put potatoes in a large saucepan with 1 - 2 inches of salted water and heat to boiling. Cover and reduce heat. Cook 20 to 25 minutes or until tender; drain.

Add butter, salt & pepper to potatoes and mash/beat in large bowl until no lumps remain. Add in milk in small amounts, beating after each addition and stirring with spatula (amount of milk needed to make potatoes smooth and fluffy depends on kind of potatoes used). Beat vigorously until potatoes are light and fluffy. Add 1 tbsp. butter to top of potatoes and cover until served. Serve hot!
