6 boneless pork loin chops (1 1/2-in thick)
1 8-oz. can crushed pineapple, undrained
1/2 cup water
1/2 cup chopped celery
4 tbsp. butter
2 tbsp. packed brown sugar
2 tbsp. soy sauce
1 tbsp. cider vinegar
1/2 tsp. garlic powder
1 package Pepperidge Farm Corn Bread Stuffing (8-oz.)

Cu a 4-5 inch long slit to make a pocket in each pork chop; set aside. In a 2 qt. saucepan over medium heat, combine undrained pineapple, water, celery, butter, brown sugar, soy sauce, vinegar and garlic powder. Heat to boiling. Stirring occasionally. Add stuffing and toss slightly to coat. Spoon mixture into pork chops. Arrange chops, stuffing side up in a 2 qt. oblong baking dish. Cover with foil. Bake at 350º for 20 minutes. Uncover; back 25 minutes more or until stuffing is golden brown and chops are no longer pink.
