3 lbs pork spare ribs
1 medium onion
¼ c vinegar
2 Tbsp brown sugar
1 c ketchup
1 Tbsp Worcestershire sauce
½ cup chopped celery
1 tsp salt, sprinkle of pepper

Directions:
Directions:
Cut the ribs in pieces of serving size. Place in a baking dish or small roaster. I like using my small dark enamel spotted roaster, and I spray it with Pam for easier clean up. The meat seems to darken nicer. Chop the onion a place over the ribs. I am always way more generous with my onions and celery in this recipe…probably double the amount. Combine everything else, dump over ribs and onions and bake in a moderate oven about 350 or a bit less for about 2 hours.

Auntie Eleanor put this recipe in a local Carillon Cookbook about 40 years ago. It has been our “go to” ribs recipe over the past 40 years of our marriage. We’ve tried others, but we always go back to this one. It has a nice sauce, that is not too sticky and sweet, and is yummy over rice.
