8 ounces really good mature cheddar cheese, grated
4 eggs, separated
Dry English mustard, 1 tsp.
Worcestershire sauce
Hot pepper sauce, to taste (be bold)
Salt and freshly ground black pepper
2 large slices good white bread (as Jennifer says, "not slimy white slice")

Put the cheese in a bowl, beat in 3 egg yolks (use the forth one in something else), a level teaspoon of mustard, a good shake of Worcestershire sauce and hot pepper sauce, and season to taste. Toast the bread.

Preheat the oven to 450 degrees F.

Whip the 4 egg whites until they stand in stiff peaks. Add a spoonful or so to the cheese mixture then gently fold the rest of them into the bowl. Put the toasts into an ovenproof dish and pour the mixture over them.

Bake in the oven for 10 minutes until browned and risen. Serve at once with a salad or spinach on the side.

This recipe was featured on the Two Fat Ladies cooking show which aired from 1996 - 1999. In particular, this recipe was featured on the Pony Club episode which aired on September 9, 1998. As you know, you work up a terrible hunger after throwing yourself on and off ponies all day long and dashing about and so on.

It is important in this recipe to spread the cheese mixture all over the tops of the bread to keep to edges from burning. Jennifer recommended serving this for lunch with a salad or cooked spinach on the side but it is also very tasty for breakfast with bacon (because why not).
