Hot sausage, 1 lb.
Ground beef or chopped sirloin, 1 lb.
Large yellow onion, 1
Vegetable or peanut oil, just enough to coat the pan
Chili seasoning packet, 1
Ground cumin, to taste (at least 2 good shakes)
Chili powder, to taste (at least 2 good shakes)
Chopped or grated fresh garlic, to taste (about 1 tbsp.)
14.5 oz. cans of diced tomatoes, 2
14.5 oz. cans of kidney beans (rinsed), 2
Sundried tomato paste, 1 tbsp.
Vegetable stock, 2 cups
Smoked paprika, 1 tbsp.
Pureed adobo peppers, 1/3 of a small can
Diced fresh tomato, 1
Dark chocolate chunks, 1/4 cup

Directions:

Heat vegetable or peanut oil in a skillet. Add 1 large sweet yellow onion (diced) and cooked until softened. Then add 1 lb. of hot (spicy) sausage and 1 lb. of either ground beef or chopped sirloin. Drain the fat.

In a separate pan, heat up vegetable or peanut oil and add one chili seasoning packet, at least 1 tbsp. of fresh, grated garlic and at least 2 good shakes of ground cumin and chili powder. Allow the spices to bloom for about 30 seconds. After about 30 seconds, add 2 cans of diced tomatoes and 2 cans of kidney beans (rinsed). Then add the meat and onion mixture which was cooked separately. Also add the sundried tomato paste, vegetable stock, smoked paprika, pureed adobo peppers, 1 diced fresh tomato and 1/4 cup dark chocolate chunks. Simmer on the stove and season to taste.

One of the informal rules of our house is no cooking during the work week. Because of this (and a general lack of time after work), we do most of our cooking on the weekends. Kevin and I love to make a big pot of chili on Saturday or Sunday (especially in the fall and winter) and to let it get us through the week. It's great by itself or with lettuce and veggies as a taco salad. I'm more of a taco salad girl but Kevin prefers chili in a bowl with cheese and tortilla chips.

As the saying goes, cooks are made but bakers are born. Neither of us are bakers as you can tell from our very general ingredient measurements. Add the ingredients to suit your personal preferences.
