"Plain fresh bread, its crust shatteringly crisp. Sweet cold butter. There is magic in the way they come together in your mouth to make a single perfect bite."--Ruth Reichl

Ingredients:
Ingredients:
Bread Dough:
1 1/2 cups warm water
2 TB sugar
1 TB yeast
3 1/2 cups flour
1 tsp salt

Garlic spread:
1/2 cup unsalted butter
1 TB garlic powder
1 tsp parsley
drizzle of extra virgin olive oil

Directions:
Directions:
Mix warm water, sugar and yeast together. Let it sit for 5 minutes.

Add flour and slat to the water, sugar, and yeast. Mix this until smooth and let it rise for 10 minutes. I used my Kitchenaid mixer with the dough hook. It was easy and worked great.

On a floured surface, roll the dough out about 1/2 inch thick. I used a pizza cutter to cut the dough in half and then in strips (about 8 - 10 inches) for the garlic knots.

Roll the strips in your hands to look like ropes and then tie in knots.

Place the knots on a greased baking sheet and allow them to rise for another 10 minutes.

Bake at 400º for about 15 - 20 minutes or until golden brown.

While they are baking, melt the butter and mix with garlic powder, parsley, and a drizzle of olive oil. As soon as the garlic knots come out of the oven, brush the tops with the butter -garlic mixture.

Personal Notes:
Personal Notes:
We have found that the garlic spread tends to thicken as it cools. Warm it up if it does. We have also found that we need to sometimes spread another layer of garlic spread on the knots. We have made very small knots and larger ones. All are delicious. This is getting to be a tradition for our table at the Longest Table celebration at WWU the first weekend of the school year.
